This is a must visit brewery. Very attentive staff, a frequently updated draft list of great beers, a range from great IPA's to specialized cask conditioned sours and weekly music and food trucks. I show up as much as I can and have never been disappointed.
We were road-weary by the time we arrived, which tends to make my observations sharper. For this part of central New York, ONCO Fermentations, Inc. holds its own.
There was a logic to the layout that became clear only after you were inside it.
I'd go back for the specific reason I went the first time, which is the mark of a place that knows what it is.
Worth the extra miles on the route if you're not already close.
